Monday was BUSY! After WW, Alex and had a breakfast date at Cracker Barrel. That boy ate like crazy. He had a HUGE pancake and part of my breakfast. Then we went to Harris Teeter to use our triple coupons. I got several things for free! When we got home we had to work on laundry. Not only did I have to do laundry, Brian's shirts needed to be ironed. I didn't think I was ever going to get finished ironing.
Brianna got her report card yesterday and made straight A's. She was a little worried about her math grade, but she did good. I'm so proud of her. She works really hard and worries about her grades. She has the goal of winning the Presidental Academic Fitness Award when she "graduates" fifth grade. She's so smart, she must get it from her Daddy.
Last night I was in the bathroom and Alex came in. I thought he was going to cry. I asked him what was wrong. He told me that a witch had locked Dora in a cage. Bless his heart, he was really upset. When I was putting him to bed, he asked me if I was a witch and I told him, "No, MawMaw is." He got tickled.
I made a new recipe last night that we all loved. I didn't think it would go over that well, but it did.
Apple and Carrot Salad
1 large red apple, cored, thinly sliced and cut into matchsticks
1 large green apple, cored, thinly sliced and cut into matchsticks
1 1/2 Tbsp fresh lemon juice, or less to taste
3 cups matchstick carrots
1/4 cup chopped chives
1 Tbsp. olive oil
1 tsp. sugar
1/2 tsp. salt
1/4 tsp. pepper
2 oz feta cheese, crumbled
Place apples in a large bowl and toss with lemon juice. Add carrots, chives, oil, sugar, salt, pepper and cheese; toss to mix thoroughly.
I didn't use the feta or the chives. I used the whole bag of matchstick carrots. The apples I used were a Gala and a Granny Smith. The combination of the two was good! I have some left over in the fridge and Alex and I are having it for lunch.
