Weekend Update

Let me just start by saying, I did NOT want to hear the alarm clock this morning.

We had a pretty good weekend. Thursday I bought groceries and heard the funniest thing. A man was on the baking aisle with a phone in his hand talking to someone, I assumed his wife. He asked her if she wanted him to buy vegetable oil or granola oil. I had to explain to Brian that there is no granola oil, it's granola bars.

Friday Becca spent the day with us. We headed out to Trader Joe's. I love that store. If you haven't tried the mini peanut butter cups, we highly recommend them. My parents came down to see what the kids got from Santa. That night we had Rock Group. There were a lot of people missing, but we had a great time anyway! It was nice just talking and laughing.

Saturday Bri and I spent some time together. We went to Rocky River Coffee, Concord Mills, BJ's, and got Bri a haircut. She can name all the places we went in order. I think she had a good time and really needed to spend some time with me. While we were running around Alex and Brian spent the day together. I think they went to Lowes.

Sunday was church and I think Jimmy preached on of the best messages I have heard him preach in a long time. We have several families going through a tough time in our church, and he preached on how to deal with life when it is falling down around you.

Keeping with one of my New Year's Resolutions I made a new recipe yesterday:

Busy Day Bacon Muffins

6 bacon strips diced
2 cups biscuit/baking mix
2 Tbsp. sugar
1 egg
2/3 cup milk

Cook bacon according to package directions; drain. Meanwhile in a large bowl combine biscuit mix and sugar. In a small bowl combine egg and milk. Stir into dry ingredients, just until moistened. Fold in bacon.

Fill greased muffin cups 3/4 full. Bake at 400 for 13-15 minutes or until a toothpick comes out clean. Serve warm. Yields 9 muffins.

I cooked my bacon in the microwave first, then crumbled it into the mix. These are dry, so I will add more milk the next time I make them. These were good and would work well with turkey bacon.

I am trying to get into some kind of groove today. With Brian back at work and Brianna back at school, I need to get back into my routine.
