YUM!

We had this for supper last night and it was so good. If I can get the kids to eat veggies, it's a plus!

Grilled Veggie Subs

4 slices red onion
1/2 cup sliced mushrooms
1 sliced zucchini
1/2 eggplant, sliced
1 tomato, sliced
4 slices swiss cheese
2 Tbsp. olive oil

Brush veggies with oil. Grill or saute until soft. Pile on rolls or foccacia bread. Top with swiss and put under the broiler until the cheese melts.

Brianna even asked for the leftovers for lunch today and said it was good. I didn't use eggplant or tomato, I did use yellow squash. The kids and I put a little light Italian dressing on it.
