Thank goodness Brianna had to go back to school today. She was getting bored being cooped up in the house for a couple of days. I'm one of those people, I don't go anywhere unless I have to. Especially when it's cold outside. I'm ready for our routine to return. Spring Break may do me in. I'm praying that it's nice that week so there can be a lot of playing outside. The kids just start getting on each others nerves, which gets on my nerves.
I watched Idol last night. It was pretty good. There were a couple that did an awesome job. Thanks to the DVR, I watched the 2 hour show in about 1 hour.
I made a new recipe last night and it was good!
Tasty Onion Chicken
from Taste of Home Chicken Cookbook
1/2 cup butter, melted
1 Tbsp. Worcestershire sauce
1 tsp. ground mustard
1 can french-fried onions, crushed
4 boneless, skinless chicken breasts
In a shallow bowl, combine the butter, Worcestershire sauce and mustard. Place the onions in another shallow bowl. Dip the chicken in butter mixture, then coat with onions.
Place in a greased baking dish; drizzle with remaining butter mixture. Bake, uncovered, at 400 for 20-25 minutes or until juices run clear.
I didn't do the extra butter drizzle. Other than that I followed the recipe. We had it with green beans and roasted potatoes. Alex loves chicken and ate a lot of this. He kept asking for more!
