The last couple of days have been weird. I'm trying to make some decisions about things and the weather has been beautiful. The kids are playing outside more, which means good naps. It also means not a lot of computer time for me.
Monday afternoon I found out that Sonya and Amos are having a baby girl. I'm so excited!
Tuesday Brianna had a field trip to Latta Plantation and she had a great time. She came home telling me all about it. I think she would like just about any kind of field trip, it gets them out of school for the day.
Last night I made a new recipe that I got from 5dollardinners.com. I'm telling you go check out the website. It also has a lot of tips for organizing your home.
Impossible Cheeseburger Pie
3/4 lb ground beef
1/2 onion, finely chopped
1 can chopped tomatoes, drained well
1 1/2 cups water or milk
3 eggs
3/4 cup Bisquick
1/4 tsp. pepper
1/2 tsp. salt
1 cup shredded cheddar chese
Brown ground beef and onion in a skillet, drain. Place meat in the bottom of a greased pie plate. Add tomatoes to the meat and mix through. In a medium bowl, whisk milk/water, eggs, Bisquick, salt and pepper. Pour over meat mixture. Bake at 400 for 25 minutes. Remove and add shredded cheese to top. Bake another 5 minutes. Remove and let cool a few minutes before serving.
I used milk with the Bisquick. The Bisquick mixture is very thin, mine flowed over the pie plate. So, I put a cookie sheet under it. Anyway, this was really good. Next time I may put some crumbled bacon on top!
