This weekend involved a LOT of pajama time! Friday the kids got out of school early. When they started the day we knew they would get out two hours early. But, while sitting in the car rider line at the elementary school they came by with a sign out sheet and let the kids out early. At the middle school the resource officer came out and told us to go ahead and go in to check the kids out early. He said they were trying to get the kids out as soon as they could. We had been home about 5 minutes before the sleet started really coming down.
Saturday we were home for the day in pajamas. The kids played, Brian slept (he had to go back into work early Saturday morning).
Sunday afternoon we ran a couple errands. Brian did some homework and Bri studied for a Science quiz.
I made two new recipes Saturday night that were delicious! Alex was excited to hear that bacon would be part of the topping for the chicken. When I told him what would go on top, he said, "That's my girl!"
Monterey Chicken
4 boneless, skinless chicken brests
1/4 cup bbq sauce
1/4 cup real bacon bits
1 cup colby jack cheese, shredded
Preheat oven to 400. I cut the chicken in half horizontally, the original recipe calls for pounding out the chicken. Season with pepper. Grill chicken until no longer pink and place on a baking sheet covered with foil. Top each chicken breast with a quarter of the rest of the ingredients. Bake until the cheese is melted. The original recipe also called for Rotel, but I totally forgot this and it was delicious without it.
Butter Pecan Sweet Potatoes
3-4 medium sweet potatoes, the original recipe calls for one per person. The only reason I didn't do this is because I didn't know how the potatoes would go over around here and I didn't want a ton of leftovers.
Olive Oil
Salt
2 Tbsp butter
2 Tbsp. brown sugar
Handful of pecans
A sprinkle of cayenne pepper
Preheat oven to 400. Peel the potatoes and slice into 1/2 inch pieces. Toss with olive oil and salt. Pour out onto a baking sheet. Bake the potatoes until tender. Combine the rest of the ingredients and I just mixed them together with my fingers. Sprinkle on top of potatoes and bake until the brown sugar caramelizes.
