Recipe

WooHoo for two posts in one week!  I told y'all things are calming down around here.  Anyway, here is the recipe I whipped up this morning for supper tonight.  (How very Suzy Homemaker of me to be planning ahead knowing we had school store this afternoon!)

Buffalo Chicken Salad Sandwiches

2 cups chicken cooked and shredded (I used chicken that Brian smoked Saturday)
1/2 cup ranch dressing
1/4 cup buffalo wing sauce
4 oz cream cheese, softened
2 celery stalks, finely diced
1/4 cup onion, finely diced (I didn't use)
1/4 tsp. garlic powder
salt and pepper to taste
buns

Mix everything except the buns in a large bowl.  Serve on buns.  I used Hawaiian rolls.

This was so good!  I didn't think everyone would like them, but they proved me wrong.  I'm mixing up more for lunches this week.
