Chicken Tortilla Soup

This was delicious!  It was super easy to make and warmed us right up!

Chicken Tortilla Soup

1 lb boneless chicken breasts
1 can diced tomatoes
1/2 cup chunky salsa
1 can enchilada sauce
1 medium onion, chopped
1 can black beans, drained
2 cloves garlic, chopped
4 cups chicken broth
2 tsp. cumin
1 tsp. chili powder
1 bay leaf

Chop chicken into bite sized pieces and throw everything in the crock pot.  Cook on low heat for 5-6 hours.

We had leftover smoked chicken, so that is what I used.  I just threw everything except the chicken into the crockpot and cooked it all day.  When I got home I chopped the chicken and added it to the soup and warmed it through.  Next time I will add some red pepper flakes or cayenne pepper, it needed some kick.
