New Recipe

I've got an easy peasy recipe to share!

Honey Sesame Crock Pot Chicken

2 lb boneless, skinless chicken breasts or thighs
salt and pepper
3/4 cup honey
1/2 cup low sodium soy sauce
1/2 cup diced onion (optional)
1/4 cup ketchup
2 Tbsp. olive oil
2 cloves garlic, minced
1/4 tsp red pepper flakes
4 tsp. cornstarch in 6 Tbsp water
Sesame seeds
3 chopped scallions (optional)

Lightly season both sides of chicken with salt and pepper. Place into the crock pot.

In a medium bowl, combine honey, soy sauce, onion, ketchup, oil, garlic, and pepper flakes.  Pour over chicken.  Cook on low for 4 hours.  My chicken was frozen, so it cooked longer, about 6 hours.

Remove chicken from crock pot, but reserve sauce in the pot.  Pour the cornstarch mixture into the crock pot.  Stir to combine with the sauce.  Replace the lit and cook on high for ten more minutes.

Shred chicken into bite sized pieces.

I served ours with brown rice and steamed veggies.
