Today is Brian and mine's anniversary. We have been married for 8 years. Happy Anniversary Brian!
I made some cards today. I am quite proud of myself. I have forgotten how much of a stress reliever it is to be creative. The house was quite during nap time, so I popped in the iPod and just stamped. I still have ink on my fingers! While I'm watching American Idol tonight I may work some more. I have an idea for another one, but need to go purchase some equipment! Next Tuesday is my stamp club night, I don't know if I will be going though, I am scheduled to have some dental work done.
I made Becca's favorite supper tonight. Becca is one of the girls that come over in the afternoon. She even helped me cook. It's nice having someone in the house that wants to learn how to cook, and I love teaching her. It's hard to get her to do her reading homework, she hates it, but will jump at the chance to get in the kitchen with me. The recipe for Chicken Baseballs will be listed below. Chicken Baseballs
4 oz light cream cheese, softened
2 tsp. light maragine, melted
1/4 tsp. salt
1/4 tsp. pepper
1/2 chopped onion
2 Tbsp. skim milk
2 cups cooked chicken, chopped small
1 8 oz can reduced fat crescent rolls
Preheat oven to 350. Combine cream cheese, butter, salt, pepper, milk, and onion. Blend. Mix with chicken and stir. Separate crescent roll dough into four rectangles and seal perforations. Spoon 1/2 cup chicken mixture into center of each. Pull opposite corners of dough to center and seal. Place on ungreased cookie sheet and bake for 20 minutes.
I don't chop the onion, I let the blender do the work for me! We double this recipe, it only makes 4, and normally we have 5-6 for supper. We all like to have these for supper, so it's a crowd pleaser!

The Chicken Baseballs were great. I made 4 and they are all gone. Easy to fix - had a salad and corn on the cob with them and it was a great meal!
