We had a pretty good weekend.
Thursday, I made a new recipe, that was quite good. I will include it at the end of this post. I got a gift card to Books A Million for our anniversary and of course bought new cookbooks! I can't wait to flag the recipes I like.
Friday Brian and Robin had to work late, so I had Becca and Kaylee later than normal. I got out some card making materials and they made cards. It was fun to watch their minds at work. They had a great time.
Saturday we had an Easter Egg Hunt at Siemens. Alex realized the bunny had candy, so he tried to get as much candy as possible. Then he found the prize egg and won bath toys. Brianna tried her best to find a prize egg, but didn't. She found a lot of eggs though. They both got gift cards to Toys R Us, because Brianna drew Easter pictures for them both. She is such a great big sister. After that we went to the Harrisburg Egg Drop and that was kind of cool. They dropped Easter eggs from a helicopter and then Brianna got lost. She didn't know she was lost, but we did. That has to be one of the worst feelings a parent can have. After we found her, we had to hurry to the car, it started raining. Then we were so tired, we stayed in for the rest of the night.
Sunday was church. Jimmy's message was really good Sunday. He taught about Communion and what it means. Apparently there were techinal difficulties before the service, but you would never know it, the staff just takes everything in stride and never lets the congregation know there are things happening behind the scenes. Then I had a summer camp meeting. Summer camp is going to be so awesome.
This morning we went to Fractured Prune for breakfast. If you don't know what Fractured Prune is, you are missing out. It is a doughnut shop where they make your doughnuts after you order them, so the doughnuts are always hot and fresh. I had a Strawberry Shortcake and Creamsicle! Yum is all I can say. The owner is so nice. If you live anywhere near Concord, go check them out, they are right beside Wendy's at Concord Mills, in the same shopping center as Firehouse Subs.
I am scheduled to have some dental work done tomorrow. I haven't been to the dentist since Brianna was a baby, so tomorrow may be quite rough. We still have some family stuff going on this week. Brianna and I are running a 5K Saturday and then we will head over to the R2C2 egg hunt at the park.
Quick Arroz Con Pollo
3 cups rice, cooked and hot
3 cups cooked and chopped chicken
1 (10 3/4 oz) can Nacho cheese soup
1 (10 oz) can diced tomatoes with chiles, drained
2 cups shredded Monterey Jack cheese, divided
Combine rice, chicken, soup, tomatoes, and 1 cup of cheese. Pour into large greased baking dish. Sprinkle remaining cup of cheese over top. Bake at 350 for 40 minutes.
This is good warmed up the next day too.
