New Recipe

I tried a new recipe last night. It was okay, I didn't follow the directions exactly and I think the key is the cold rice. I think that would have made all the difference.

Fried Rice:

3 Tbsp. peanut oil
3 cups cooked rice, chilled
1/2 cup diced ham, pork or smoked turkey (I left this out)
3 scallions, white parts only, mined
1 egg
1 Tbsp. soy sauce
1/2 tsp. sugar
pepper

Heat the oil in a large skillet or wok. Stir fry the rice until lightly scorched. Add the ham and scallions and toss 1 minute. Push to one side of the pan. In a bowl, beat the egg, then add it to the pan and scramble lightly. Mix it into the rice along with the soy sauce, sugar and pepper. Toss over high heat.
