I tried a new recipe from my Hungry Girl cookbook last night and all I can say is YUM!
Fettuccine Hungy Girlfredo Veggie Explosion
1 package House Foods Tofu Shirataki Fettuccine Shaped Noodle Substitute
1 wedge The Laughing Cow Light Original Swiss cheese, at room temp
1/2 cup small broccoli florets
1/2 cup zucchini chunks
1/2 cup red bell pepper chunks
1 Tbsp. fat free sour cream
2 tsp. Parmesan-style grated topping
Salt and black pepper to taste
Chili and garlic powders, optional
Place all veggies in a medium microwave safe bowl with 2 Tbsp. water. Cover and microwave for 2 to 3 minutes, until veggies are tender. Once the bowl is cool enough to handle, drain water and set aside.
Rinse and drain shirataki noodles well. Dry noodles thoroughly, using paper towels to soak up as much moisture as possible. Us a knife or kitchen shears to slice them up a bit.
Place noodle in a microwave-safe bowl and top with sour cream and Parm-style topping. Break cheese wedge into pieces and add to the bowl. Microwave for 1 minute.
Stir well and microwave for 1 minute.
MIx in veggies and season well with salt and pepper. Add the chili and garlic powders if you like.
Makes 1 serving for 3 WW points.
This is what we did. I did not use the tofu noodles. It was enough that I was asking the family to eat a bunch of veggies! I did use a whole wheat spaghetti though. I prepared the veggies as listed and the noodles according to package directions. Then, I put all the sauce stuff together in a small bowl and put in the microwave. I then combined everything in a bowl. I also added the chili and garlic powders. This was so good and would also be tasty with chicken or shrimp! Bri and I were talking about this would be a great way to use leftover grilled or rotisserie chicken. I'm thinking it would also be good with carrots. It was super easy to make too. This recipe is enough for 1 serving, so I added more to feed the whole family.
We are looking forward to hanging out with the Walters clan today. Brianna is looking forward to playing with Jessie. I'm excited about the Mommy Points this is going to earn me!
