I have to confess, I got a little weepy when I dropped Brianna off. Especially after being reminded that Adrienne is a Senior, and this is my last year at home with Alex.
Alex and I met Ellie and Joey at Cracker Barrel for breakfast. He and I split the Blueberry French Toast and let me tell you, it was DELICIOUS! The bread was a blueberry bread, and of course blueberry syrup. After breakfast we ran a couple errands, then came home to clean.
Here's what I made for supper tonight:
Three Cheese Chicken Penne Pasta Bake

1 1/2 cups multi-grain penne pasta, uncooked
1 pkg. fresh spinach leaves
1 lb. boneless, skinless chicken breats
1 tsp. dried basil leaves
1 jar spaghetti sauce
1-2 cloves garlic, minced
1 can diced tomatoes, drained
2 oz. Neufchatel Cheese, cubed
1 cup shredded Mozzarella cheese, divided
2 Tbsp. grated Parmesan cheese
Preheat oven to 375.
Cook pasta according to package directions, omitting salt and adding spinach to the boiling water the last minute.
Cook and stir chicken and basil in large nonstick skillet sprayed with cooking spray on medium high heat 3 min. Stir in spaghetti sauce, garlic, and tomatoes; bring to a boil. Simmer on low heat 3 minutes or until chicken is dones. Stir in Neufchatel.
Drain pasta mixtures; return to pan. Stir in chicken mixture and 1/2 cup Mozzarella. Spoon into 2 quart casserole or 8-inch square baking dish.
Bake 20 minutes; top with remaining cheeses. Bake 3 minutes or until mozzarella is melted.
