Ramblings

I've made a couple new recipes this week. Some were good, some were NOT, some could use a little work.

Sunday I made Hobos. Hobos are usually made when camping. I think I learned about them at church camp. Anyway, I took frozen turkey burgers and topped with canned sliced potatoes, sliced carrots, chopped onion and some corn. Wrapped it all up in tin foil and put them on the grill. We all liked them. The kids thought it was neat!

Monday I made Whole Wheat Broccoli Noodle Kugel. I found the recipe on the WW site. This the one that needed some work and wasn't all that great. Brianna poured some fat free Italian dressing over hers and said it was better. I don't think this will become a staple recipe around here. It was just dry and needed something, I can't quite put my finger on what it needed.

12 oz whole wheat egg noodles
1 spray cooking spray
10 oz frozen broccoli, thawed
1 1/4 cup Egg Beaters
1 Tbsp. Dijon mustard
1 tsp. dried thyme
1 tsp. paprika
1/2 tsp. onion powder
1/2 tsp. salt
1/2 tsp. black pepper
1/4 tsp. garlic powder

Cook pasta according to package direction, drain.

Preheat oven to 350. Coat a 9-inch baking dish with cooking spray.

Mix all ingredients together in a large bowl; pour and spread evenly into prepared pan.

Bake until set and browned, about 30 minutes. Cool on a wire rack for at least 10 minutes before serving.

Tuesday, Brianna had a dentist appointment, so I needed something that would come together fairly quickly while I helped her with homework after the dentist. I found the recipe for Pizza Pot Pie last week on www.getonthegravytrain.blogspot.com.

Pizza dough, refrigerated or homemade
1 1/2 cups marinara
2 chicken breasts, boneless and skinless
1/3 cup black olives
1 cup Ricotta
1/2 cup Mozzarella
1 bell pepper
1/2 small onion, chopped
2 garlic cloves, minced

Preheat oven to 400. Chop chicken and saute until just cooked through in a skillet. Add the chicken and the rest of the ingredients (except the dough) in a large bowl and mix well. Portion the chicken mixture into 4 mini casserole dishes and top with a little more cheese.

Cut the dough into 4 pieces and stretch over the tops of each dish. Make sure to cut vents for steam.

Bake for 25-30 minutes or until the crust is golden and the inside is bubbly.

This is what I did differently: I poached the chicken beforehand. When I got home, I just shredded it and threw it in with the other ingredients. I also did not use for mini casserole dishes. I used one big dish and we just served from that. I also didn't use the black olives, the boys don't really care for them.

I think that's it for the recipes. Whew! That's what happens when I don't post them when I should.

Now for a little rant. The City of Concord's police chief's daughter went missing last week. They found her early Sunday morning dead in a storage facility. They caught the guy who owned the storage unit in NY on Monday. He claims she overdosed and died in her sleep. Okay. Why then, did he put her in a storage unit? That's what I don't get. Just in case you are ever in this situation: If someone dies in your presence, CALL 911!

The kids and I went to get ice cream last night and on our way back we saw an accident. An older lady hit a guy on a bike. There was a man stopped and he was on the cell phone with 911. I stopped to see if I could help, the lady looked shaken up. I wanted to make sure she was okay. When the police and firemen showed up I told the officer I didn't see anything, just stopped to make sure the lady was okay. I knew she was in good hands, so I left. Bless her heart, I couldn't get her to sit down and she wouldn't let me call anyone for her.
