Weekend Update

Our weekend started a little early. On Wednesday night Brianna had a sleepover with her Girl Scout troop. I think they were up pretty late. When I picked her up we headed to Sandy Mush for a quick trip. One of the nurses Momma works with at Hospice ordered a Thirty One purse, so we went to deliver that. Brianna tried to sleep on the way. It's hard though with Alex in the backseat wanting to talk to her. She slept all the way home, I let her sit in the front seat. When we got home I made a quick Chicken Gumbo recipe.

Friday Alex and I went to Brianna's honor roll assembly. It was a loooooong ceremony. I guess since they added so many new teachers, things will take a little longer. Then we came home to put groceries up and clean a little. The house gets so out of control when I don't feel like cleaning a little everyday. Friday night I had a Thirty One party. I always have such a good time at the parties.

Saturday Brian worked on a truck and a computer. I HAD to clean a little. There were only a few places to sit in the living room, there was stuff on the couches and all over! That night I had a second Thirty One party and a bonfire. Again, it was a good time. It was great to sit around the bonfire talking and getting to know new people.

Sunday we were home the entire day. The phone didn't ring off the hook. We just laid around, relaxed and rested.

Here's the recipe for the chicken gumbo:

15 Minute Chicken Gumbo

16 oz. frozen gumbo style vegetables, onion, okra, and peppers
29 oz diced tomatoes with mild chilies
12 oz refrigerated chicken breast
1 Tbsp. all-purpose flour
1 tsp. Creole seasoning

Coat a large skillet with nonstick spray. Add vegetables and saute over high heat, stirring frequently, for 2 minutes. Stir in flour and cook 1 minute more.

Stir in tomatoes, chicken and Creole seasoning. Cook over medium heat, stirring frequently, until hot, about 6 minutes.
