I'm going to try to do better at posting new recipes when I try them out. I made this for supper tonight and it was delicious. Sherry gave me the recipe several months ago and I just found it when I cleaned out my email inbox last week.
Bourbon Chicken
Boneless, skinless chicken breasts or tenderloins cut into bite-sized pieces.
In a bowl mix:
3/4 tsp. crushed red pepper
1/4 cup apple juice
1/3 cup light brown sugar
2 Tbsp. ketchup
1 Tbsp. cider vinegar
1/2 cup water
1/3 cup soy sauce
Heat oil, add chicken and cook until lightly browned. Add sauce, bring to a hard boil. Reduce heat and simmer uncovered for 20 minutes, until thickened.
Sherry recommended doubling the sauce recipe and I did. I served with brown rice, broccoli and egg rolls from Aldi.
