Yummy Lunch!

Yesterday, I made such a good lunch and get this, it was good for me! I'm telling you, I'm really taking this seriously. I'm sick and tired of being "fluffy." Anyway, yesterday, I made a chicken broccoli alfredo. The pictures are all for Sherry.
This is a Spaghetti Squash. This is what it looks like in the store, mine had a sticker on it that said what it was.

Cut the squash in half.

With an ice cream scoop, I cleaned out the seeds. Then I poured a little olive oil over each half. Placed it cut side down on a baking sheet and placed it in a 350 degree oven.

Take a fork and scrape the squash out of it's "shell." The skin stayed hard, like a shell.
I used the squash in place of spaghetti noodles. I mixed up an alfredo sauce using 1 wedge of Laughing Cow Light Original Swiss, 1 Tbsp. fat free sour cream, 1 Tbsp. Parmesan cheese, and a little pepper. Then, mixed the sauce with some steamed broccoli, the squash and some grilled chicken. It was so good. I used half the squash, which was 2 cups, but should have only used 1. It was entirely to much food. Alex had to finish it for me and he liked it oo.
