Stretch pizza dough over the bottom of your muffin tin, yes, turn it over and use the outside. I put the dough on every other one. Bake at 350 until golden. Brush the inside of the cups with sauce and fill with favorite toppings. You can put the filled cups back into the oven to melt the cheese, if you want.
Roasted Strawberry Jam
from familystylefood.com
4 cups strawberries, hulled and quartered
1/2 cup sugar
2 Tbsp. clear fruit brandy (raspberry, strawberry, or cherry flavored) or strawberry flavored vodka
1 vanilla bean pod, split plus scraped
Toss strawberries in a bowl with the other ingredients. Let stand for 10 minutes. Transfer to a rimmed baking sheet or small roasting pan.
Roast in a 250 degree oven for 2 hours, or until the berries are shriveled and very soft. Mix around once or twice as they cook.
Let the syrupy berries cool. Remove the vanilla pod. Pulse in a food processor or mash by hand with a potato masher to a chunky consistency.
I didn't use the vanilla pod, I just used vanilla extract because that is what we had. I got the cheapest strawberry vodka at the ABC store, they did not have a clear brandy. This is super easy and delicious. We had it this morning on biscuits.
