YUM!

I've been checking out www.skinnytaste.com a LOT lately. It's a website of Weight Watcher recipes. She included Points+ values and nutritional facts with each recipe. Here's a new recipe I made from there tonight: Grilled Chicken with Spinach and Melted Mozzarella from skinnytaste.com 24 oz chicken breasts sliced in half lengthwise to make 6 cutlets salt and pepepr to taste (I didn't add any salt) 1 tsp. olive oil 3 cloves garlic, crushed 10 oz frozen spinach, drained 3 oz shredded mozzarella 1 roasted red pepper, sliced into strips Preheat oven to 400. Season chicken with salt and pepper. Lightly spray grill with spray. Cook chicken on the grill until no longer pink, careful not to overcook. Meanwhile heat a saute pan on medium heat. Add oil and garlic, saute a few seconds, add spinach, salt and pepper. Cook a few minutes until heated through. When chicken is done, lay on a baking sheet lined with foil or parchment for easy clean-up. Divide spinach evenly between the chicken and place on top. Top each with half oz mozzarella, then sliced of roated pepper and bake until cheese is melted (I did this on the grill, I didn't want to heat up the oven).
