Weekend Update

What a good weekend we had! Friday afternoon/night the boys went fishing again. Brian got home early, or what we consider early. Then after supper he took Alex fishing. Bri and I stayed home to make cookies. That super easy recipe will be at the bottom of this post.

Saturday the DirectTV guy was supposed to come install our satellite between 12 and 4. My parents came to spend some time with the kids. Pawpaw went fishing with Brian and Alex. At one point Alex had a turtle on his hook. Brian said it let go of the hook before they got it to the bank. By the time the Direct guy came at 7:15, it was storming and we worked it out where he would come back the next morning.

Sunday we finally got some TV. The kids have been parked in front of it for a while. We are going to try to do without it most of the day instead of being glued to it all the time. We had to go run a couple errands and that was about it for the day.

Cool Whip Cookies

1 box cake mix, any flavor
8 oz Cool Whip thawed
2 eggs

Mix all together and roll in powdered sugar. This is not a thick batter like some cookie batters. Bake at 350 for 10-12 minutes.

We've had orange and lemon cookies. I have strawberry and chocolate to make later.

Chicken Rice and Broccoli Casserole

2 chicken breasts cooked and shredded
2 bags Minute Brown Rice, cooked
Cream of Mushroom soup
1/2 bag frozen chopped broccoli, steamed
Cheddar cheese
Salt and pepper to taste

Mix all ingredients, reserving some cheese for topping. Pour into casserole dish, top with reserved cheese and bake until cheese is melted.

We had this with lima beans. I cooked them in chicken stock and we really liked them.
