Weekend Udpate

 Nothing much going on here this weekend.  A lot of homework got accomplished, which is good.  Bri has a couple project due this week that she was trying to get wrapped up.  Alex played outside, since it was beautiful.  Alex's favorite words this weekend were "immediately" and "amazing."  He needed to show me something amazing outside and "Daddy needs you immediately."

I do have some recipes to share.

Corn Salad

2 cans white shoe peg corn, drained
2 green onions, sliced
Cucumber, diced

Mix the veggies with about a tablespoon of mayonnaise and salt and pepper to taste.  Store in the fridge.

I made this Buffalo Wing Hummus from slenderkitchen.com and really liked it with veggies.



  • 1 1/2 cups canned chickpeas, drained and rinsed (reserve 1/4 cup of the liquid)
  • 2 cloves garlic
  • 1/8 cup (2 tbsp) tahini
  • 1/8 cup (2 tbsp) fresh lemon juice
  • 3/4 tsp paprika
  • 1 tbsp barbecue sauce
  • 1 1/2 tbsp Frank’s Red Hot (or similar cayenne pepper sauce)
  • 1 1/2 tsp white vinegar
  • 3/4 tsp salt
Instructions
  1. Add everything to a food processor and blend until it reaches the texture you want. I like mine smooth and creamy. Enjoy.
