Weekend Update

What a wonderful weekend.  Friday night we were home doing laundry, getting caught up cleaning.

Saturday Bri and I started the day off going to Hip Hop Hustle at the Y.  It was a tough class.  I was a sweating mess when we left.  When we got home Brian told us his friend was stopping by.  I was glad that I had spent the extra time cleaning and working on laundry Friday night.  I didn't have to do the hurry up and clean because someone is coming over dash.

Sunday afternoon everyone worked on homework.  Bri has two projects due this week, I'm sure Brian has homework due this week, and Alex had to work on his homework.

That's about it.  I made two new recipes this weekend!

Bacon Cheeseburger Meatballs

2 Tbsp. olive oil
2 lb ground turkey
1 medium onion, minced
8 oz raw bacon, diced
6 oz cheddar cheese, grated
1/2 cup bread crumbs
3 eggs, lightly beaten
2 tsp salt

Preheat oven to 450.  Spray baking dish with Pam or olive oil.  Heat the remaining olive oil over medium heat in a large pan.  Add onion and bacon, cook until the onion is translucent.  When cooked, let cool on a plate.  I put mine on a small plate and put it in the freezer for a quick cool.  Then add all ingredients to a large bowl and mix.  Roll out into golf-ball size balls.  Bake for 18 to 20 minutes.  The kids dipped theirs in ketchup. It's like a bacon cheeseburger without the bun!  The recipe made a good many meatballs.

Cucumber Salad

Slice cucumbers, I sliced mine on the thicker side.  Squeeze some lemon juice and add a little olive oil over the cucumber.  Then sprinkle some salt, pepper, and cayenne pepper over the cucumber. Then I tossed them together a bit.  This was really good and easy, and not spicy at all!
