What a busy, busy weekend! Friday night I needed some downtime, so it was pizza and vegging out in front of the TV.
Saturday started with Bri needing to be at the Presbyterian church at 8 AM. Her Girl Scout troop assisted a Junior troop in giving a Teddy Bear Tea for the little Girl Scouts. When I picked her up the little girls were coming out with their pretty dresses, hats, and of course their teddy bears. Alex didn't want to participate in the errands I had to run after I picked her up from Teddy Bear Tea. He said he had his weekend pants on and wasn't putting on "real" clothes. When we got home she and I both took a nap. We were both so tired! Saturday night she went to her friends house to watch the Kids Choice Awards.
Sunday afternoon was spent on homework and on the couch. Bri had to write a poem using her initials. For T, she wrote about breaking her toe multiple times. For supper I made fish tacos using tilapia. We got the idea from the nutritionist we see once a month, who has suggested we eat fish three times a week (yeah right). I like fish, always have, but Brian and the kids, not so much. They are all about fish sticks and popcorn shrimp. All I did was pour some olive oil on a baking sheet, put the tilapia on and sprinkle both sides with taco seasoning. Then I baked it. When it is finished baking, I flaked the tilapia, so we, the kids and Brian, wouldn't have to eat a big bite of fish. We served it like we would normal tacos, with cheese, lettuce, salsa, and sour cream in flour tortillas. Bri decided she wouldn't like them when I told her what we were having. Both kids and Brian ate them though. Alex even asked for seconds. I wish I would have had some black beans to have on the side, maybe next time.
