Gone

Thursday got gone before I knew it. It was such a busy, busy day. Started off with a guy from freecycle.com coming to pick up our old bed. He was here around 10:30, then a hostess came over to pick up her Thirty One order. Then we had to deliver an order. While we were in Harrisburg we stopped by Lowes Foods to get some Cajun Turkey, man, oh man it was goooooood. Brianna had a field trip she didn't get back to school until 4, so we picked her up then, and then had to get her to Girl Scouts at 5. So, it was a sandwich kind of night.

This week I made an excellent recipe that was posted on my "What's for supper?" thread on FaceBook.

Oven Fried Chimichangas

Whole Wheat Tortillas
2 cups cooked brown rice
1 can black beans
Shredded cheddar cheese
Chipotle in adobo
Cilantro

Preheat oven to 425 and place jelly roll pan in oven while it preheats, I put a little olive oil on the pan. Mix together rice beans, chopped chipotle and cilantro. Sprinkle some cheese on tortilla, put some of the rice mixture on top. Roll up. When you are finished assembling, place on hot jelly roll pan. Bake for about 10 minutes. Top with salsa, sour cream, I added some chopped tomatoes and avocado.
